Breaded Chicken Cutlets with Fries and Veggies

Ingredients

  • 1 bag frozen oven prepared fries
    For the chicken:
  • 500g chicken breasts
  • pinch of salt
  • pepper
  • flour (for breading)
  • 2 eggs (for breading)
  • bread crumbs (for breading)
  • olive oil
    For the veggies:
  • 1 broccoli
  • 2 carrots
  • 1 small onion
  • green onions
  • 12 garlic cloves (unpeeled)
  • salt, pepper, garlic powder, oregano to taste
  • 1 can pre-cooked green peas

Preparation

Preheat your oven to 450 F. Wash your vegetables and cut the broccoli, carrots, onion, and green onions. Seperate each garlic clove. Coat your baking tray with olive oil, or cover it with parchment paper, and add all the vegetables to it, excluding the green peas. Season with salt, pepper, garlic powder, and oregano to taste. Roast them in the oven for 25 to 35 minutes, to your liking.

Make your fries following the instructions on your packet.

Meanwhile, slice the chicken breast through the middle. Cut the chicken breasts into small fillets. Using a meat pounder, hammer each fillet until flat. Season with salt and pepper to taste. Beat 2 eggs and pour onto a plate. Pour your bread crumbs and flour onto 2 other plates. For each piece of chicken, cover them with flour, then eggs, and then bread crumbs. Add oil to a pan and put it on medium heat. Cook each chicken for about 2 minutes on each side, until golden brown. (You will then need the oven at 400 F) Put all the chicken on a baking tray and bake for 8-10 minutes. Flip the chickens halfway

Mix in the peas with the rest of the vegetables and serve with the chicken and fries.
