Chia Seed Pancakes

Ingredients

  • 2 Tbsp chia seeds
  • 6 Tbsp water
  • 2 cups almond milk (or any plant based milk)
  • 1 Tbsp baking powder
  • 1 Tbsp vanilla extract
  • 1 and 1/2 cup whole wheat flour (or all purpose)
  • 1 Tbsp olive oil
  • Berries (strawberries, blueberries, blackberries, raspberries) for topping
  • Banana slices and flax seed meal for topping (optional)

Preparation

In a small bowl pour in the chia seeds and water and mix together. Let them sit there until they are needed again. In a large bowl pour in the milk, baking powder, and vanilla extract. Mix these ingredients together with a whisk. Then, gradually add and whisk in the flour. Add the chia seeds to the ingredients in the large bowl (at this point they should have the consistancy of an egg). Whisk together. Finally add and whisk in the olive oil.

Turn on the stove to low-medium heat. Use a non-stick pan, which there is no need to grease. Once pan is hot, take a 1/3 cup measurer and begin to make the pancakes. Once the pancake has small-medium bubbles all over, flip it. After a short while the pancake will be ready. Serve in individual plates and add the banana slices and berries on top. Sprinkle with flax seed meal.

Servings and Preparation Time. This recipe serves 6 and requires about 20 to 30 minutes to be prepared.
