Limey Cheesecake

Ingredients

    For the Crust
  • 200g (1 and 3/4 stick) butter
  • 1/4 cup sugar
  • 1 and 3/4 cup flour
    For the Cheesecake
  • 16 oz (2 pkg) cream cheese (at room temp to easily whisk)
  • 2 Tbsp sugar (this is a "less sweet" version; you can add more if you wish :D)
  • 3 tsp lime juice (freshly squeezed)
  • 1 tsp vanilla extract
  • 2 eggs

Preparation

Preheat oven to 325 F. Grease an 8 inch circular cake pan with non-stick spray and set aside.

For the Crust
Melt butter in a medium bowl. Add the sugar and mix with a whisk. Then add flour and mix until it has come together like dough. Press the dough into the cake pan to evenly spread all around. Place crust in the oven for 8 minutes.

For the Cheesecake
In another bowl, mix together the creamcheese and sugar with an electric mixer (or a whisk) until soft and creamy. Then mix in the vanilla, lime juice, and one egg. After incorporating, mix in the remaining egg. Using a spatula, pour the cheesecake mixture into the cake pan (over the crust) and even out. Place in oven for 35-40 minutes.

Servings and Preparation Time. This recipe serves 8 and requires about 60 to 70 minutes to be prepared.
