Mini Banana Crust Cheesecakes

Ingredients

    For the Crust
  • 2 mashed bananas
  • 1 & 1/2 cup blanched almond flour
  • 1/2 tsp baking powder
    For the Cheesecake
  • 1 pkg cream cheese (8 oz.)
  • 2 Tbsp sugar
  • 1/2 tsp vanilla extract
  • 1 & 1/2 tsp freshly squeezed lime juice (about 1 lime)
  • 1 egg

Preparation

Preheat the oven to 325 F. Grease a 3 by 4 mould cake pan with non-stuck spray (12 cakes in total)

For the Crust:
In a bowl, mash the bananas. Add 1 cup of the almond flour and the baking powder and whisk together. Then add the remaining 1/2 cup of almond flour and whisk together.
Using a dough scoop or a spoon, put the crust into each cupcake mould and flatten it out with a spatula. Put aside.

For the Cheesecake:
In another bowl, put the cream cheese and add in the sugar. Using an electric beater or a whisk, mix together for about one minute.
Add in the vanilla, lime and egg and mix together.
Pour the cheesecake mixture onto each crust and distribute it evenly. Place the cheesecakes in the oven for 13-15 minutes, or until the cheesecake on top doesn't move.
