Orzo Veggie Bowls

Ingredients

  • 1 medium onion
  • 1 red bell-pepper
  • 4 garlic cloves
  • 1 tbsp olive oil
  • pinch of salt
  • 1 box mushrooms
  • 2 zuccinis
  • 24 cherry tomatoes
  • 100g goat cheese
  • 450g orzo
  • fresh cilantro for garnishing

Preparation

Chop the onions and bell-peppers, and mince the garlic. Pour the olive oil into a pan and sautée the onions, bell-peppers and garlic, and add a pinch of salt. Slice the mushrooms and sautée with the other ingredients until soft and tender, and then slice the zuccinis and add as well. Cook until tender.

While this is cooking, FOLLOW THE INSTRUCTIONS ON YOUR ORZO PACKAGE TO COOK ORZO.

Slice the cherry tomatoes and cut the goat cheese into 6 parts. Take 6 bowls and divide the orzo into each to your liking. On top of the orzo, add all the sautéed ingredients, tomatoes, goat cheese and garnish with cilantro.
