Ranchero Eggs with Quesadilla

Ingredients

  • 4 eggs
  • 4 soft corn tortillas
  • 100 grams of grated cheese
  • 1 spoon of oil
  • 1 cup of chunky tomato, garlic, onion sauce
  • 1 jalapeño pepper (optional)

Preparation

In a hot pan, add the oil and the eggs (sunny side up). When the eggs are half cooked, add the cup of chunky tomato, garlic, onion sauce. (If you are using jalapeño, add the chopped jalapeño pepper on top). Cover the pan and cook for few more minutes until the egg whites are fully cooked.

On as separate pan, heat the soft corn tortillas flipping them over to heat both sides. Add grated cheese on top of each tortilla and fold them in two. Continue flipping over until the cheese is melted. Serve on individual dishes one quesadilla and on egg with sauce side-by-side.
